Summary. Sociopolitical reforms associated with the introduction of market economy mechanisms negatively affected agriculture edge. Agriculture, food and processing industry of Kuban was in a deep prolonged systemic, financial and economic crisis. Today in the province, there are all the prerequisites for the development of rabbit breeding. This direction can be the engine of development of private farms. Already have results that suggest the formation of industrial rabbit, but there are a number of reasons hindering the development of the industry, one of which is the extensive method of growing animals without the use of modern technologies and feeding. Such an approach does not rely on growth of herds of these animals and their meat market saturation. Transition to organic animal breeding production includes not only the transition to the new technology content, but also the use of feed "organic" type. Based on this, we performed a veterinary sanitary assessment of rabbit meat in the application of the absorbent probiotic preparation "Organic SBA" in the technology of growing rabbits and concluded that use of the drug does not alter the quality of the flavors of the meat. Slaughter of the animal can be carried out regardless of term of use the drug. Use biorecovery "Organic SBA" to solve animal health problems in rabbit breeding rate of 50 ml/m2 of floor area it is advisable to position the normalization of climate and from the point of view of increasing the efficiency of cultivation of healthy rabbits with high quality meat.
