Charolais bulls breeding to obtain organic beef for pasture fattening

Summary. Necessity of further improve technological solutions for the cultivation and fattening of beef calves, aimed at improving meat productivity, ensuring not only the quality, but also the safety of meat, has become especially urgent in connection with the increasing requirements for the quality of beef with organic status. Results of studies of pasture technology for the production of organic meat raw materials from Charolais bulls of the meat direction of productivity in the farms of Goryachiy Klyuch and Mostovsky districts of Krasnodar region are presented in the article. In terms of safety indicators (maximum permissible levels of safety of residual amounts of pesticides, toxic elements, antibiotics), the meat of bulls from the studied farms did not have significant differences and met the requirements for high-quality beef. The authors established that the Charolais pasture meat breed of large horned cattle in terms of the morphology of carcasses (60-65% of meat content), the chemical composition of raw meat and its safety meets the requirements of the national standard of the Russian Federation GOST R 565082015 «Organic products. Rules for production, storage, transportation» applicable to organic, environmentally friendly products. After analyzing the research results, the authors came to the conclusion that it is necessary to give preference to extensive fattening of large horned cattle on pastures without concentrates or with a minimum consumption of concentrated feed.
