Quality and safety evaluation of broiler chickens meat introducing probiotic complex into the diet

Summary. The main principle being implemented in the poultry industry, at the moment, is to guarantee food safety ‘from the field to the table of the consumer’. The intensive development of animal husbandry at the present stage requires new approaches to the organization of feeding farm animals and poultry, the introduction of modern feed additives, which do not include antibiotic substances. The article describes the results of tests conducted on broiler chickens of the COBB-500 cross. The experiment showed the high efficiency of the use of the probiotic complex for safety indicators, as well as the quality indicators of the meat of broiler chickens of the experimental groups, where the probiotic was used, the physicochemical and amino acid composition of the meat, the tasting assessment of the broth and meat raw materials by organoleptic indicators. The tasting evaluation data revealed high quality indicators of meat of broiler chickens, in the diet of which the studied probiotic complex was introduced, in appearance, color, smell, the meat had a more elastic texture, was juicy, had high taste indicators, all this indicates a high value of meat chickens of experimental groups. Carrying out reactions with a 5% solution of copper, formol and reaction to peroxidase also confirmed the high quality of the meat of experimental chickens. The results of the study confirmed the valuable amino acid composition in high concentration, the high qualitative and quantitative protein composition of broiler chickens, in the diet of which the studied probiotic complex was added. Meat analysis showed that the content of toxic elements was at the level of the lower limits of detection methods, the content of pesticides, antibiotics was not detected. Microbiological indicators corresponded to the requirements approved by GOST.
