Meat productivity of bulls and quality of meat for food for children

Summary. The authors conducted research on the study of meat productivity and safety of beef for the production of baby food, obtained in conditions of environmentally friendly keeping and feeding of the farm for the maintenance of large horned cattle of MOK Bratkovsky JSC (Korenovsky district, Krasnodar region). The average daily gain in live weight of experimental Simmental and Black-and-White dairy breeds after 9 months of intensive fattening was more than 1 kg. In meat bulls of Hereford and Kalmyk breeds, the average daily gain in live weight did not differ significantly. Safe high-quality meat raw materials were obtained in accordance with the interstate standard from bull-calves of four breeds, fattened in an ecologically clean raw material zone with a three-month intensive final fattening up to 15 months. Carcasses of Simmental, Black-and-White, Hereford and Kalmyk bulls had a high biological value of meat, which is expressed in a high level of essential amino acids - 87.92, 86.78, 88.56 and 87.31 g per 1 kg of natural beef, respectively. The protein quality index (ratio of tryptophan to hydroxyproline) of the longest muscle was high and amounted to 4.8, 4.6, 5.7 and 5.5, respectively. It was found that slaughter age does not significantly affect the beef tenderness of young bulls. The quality and safety of meat raw materials obtained from Simmental, Black-and-White, Hereford and Kalmyk breeds comply with the requirements of GOST and the technical regulations of the Customs Union for baby food meat raw materials.
