Organization and implementation of veterinary and sanitary expertise in farms, at slaughter houses and in food markets in the Russian Federation

Summary. The State Veterinary Service of the Russian Federation is faced with the task of improving and properly organizing veterinary and sanitary expertise during animal slaughter, control of animal products and plant products on food markets. In each subject of the Russian Federation, work is being carried out to improve the structure of veterinary institutions in order to increase the effectiveness of measures to reduce the morbidity and mortality of productive and domestic animals, as well as for successful veterinary and sanitary examination, including ensuring requirements for veterinary specialists and material and technical base. To carry out veterinary and sanitary examination, the state veterinary Service plans antiepizootic, therapeutic and preventive measures against non-infectious diseases - all types of animal treatment, as well as veterinary and sanitary measures aimed at creating sanitary-friendly environmental conditions for animals, ensuring the status of veterinary well-being for obtaining raw materials and animal products. The authors analyzed information on the veterinary and sanitary examination of raw materials and animal products in the form of 5-vet, conducted by the state veterinary service in farms, animal slaughter enterprises and food markets of the Russian Federation. The article presents data on the results of veterinary inspection of slaughtered animals and veterinary and sanitary examination of meat, fish and aquatic organisms carried out in farms of various forms of ownership, as well as at slaughterhouses (meat processing plants, poultry processing plants, cold storage) and meat processing enterprises and food markets in Russia for 2019-2020. According to the reported data, no cases of anthrax, Aujeski disease, classical swine fever, porcine erysipelas, emphysematous carbuncle, rabbit hemorrhagic disease, Marek's disease, Newcastle disease were detected during the examination, slaughter of animals and birds. Based on the results of the analysis of statistical reporting, the authors proposed to develop and unify a computer program for generating a report in the form of 5-vet in the subjects of the Russian Federation.
