Organization of veterinary-sanitary expertise of meat and meat products at food markets and shopping malls

Summary. Providing population with safe production is a high-priority goal of veterinary service. The aim of this work was study of meat products expert evaluation organization in Kazan. Research of control and expert activity in Kazan city was performed for 5 years by monographic, statistic, microbiological, epizootological methods. Examination and sanitary-veterinary expert evaluations in Kazan are performed by 13 state laboratories and 24 veterinary stations. 90 experts monitor in laboratories and veterinary stations. Veterinarians of the Main Laboratory of Veterinary-Sanitary Expert Evaluation performed more than 1,6 million meat products evaluations from 2010 to 2014. Portion of beef in the structure of the total volume of admitted production composed 33,2%, poultry 29,1%, other meat products 21,5%.The smallest proportion of the incoming production was rabbit meat (0,04%). From 2010 to 2014, 1574 cases of carcass affects were exposed: 81,6 % of them beef, 17,9% pork, 0,5% mutton. There were cases of fasciolasis (41,6%), noncontagious (30,0%) and invasive diseases (26,5%) including dicroceliosis (1,7%), dictyocaulus (0,2%) of beef. Affects typical for noncontagious (69,1%) andinvasive diseases (30,9%) were traced in pork. Isolated cases of fasciolasis, dicroceliosis, other invasive and noncontagious diseases were determined in sheep and goat meat exposed to expert evaluations. The tested production was admitted to sale to the general public or reprocessing according to degree of conformity of veterinary-sanitary evaluation results with set regulations.
